I had a hard time deciding what to make today. I was looking through my Pinterest board and nothing was sounding good. So I thought to simplify it and go back to the basics…
Dinner turned out to be Coleslaw, Roasted Potato Bites and Baked Beans and it was DELICIOUS. I will probably be going back for leftovers later.
The coleslaw was extremely easy. I just opened a bag of coleslaw mix and I added some sweet and sour dressing to it and mixed it up in a tupperware container. I didn’t even have to dirty a spoon to mix it, I just threw on the lid and shook it up and the leftovers will be ready to be put in the fridge.
For the baked beans I opened up a can of Bush’s Vegetarian Baked Beans which were delicious. Like I do with any can of baked beans I added ketchup, mustard, brown sugar, garlic powder and onion power and heated it up on the stove top. They tasted just like all the other canned baked beans I usually make.
And finally for the roasted potatoes! I cut up some red skin potatoes to bite size pieces with the skin on. I heated the oven to 425 degrees while I was cutting the potatoes. I then put the potatoes on a baking sheet and mixed them with olive oil, french onion soup packet and a little bit of salt. I then put them in the oven for 45 minutes and they were perfectly cooked. I had never used this seasoning for the potatoes before but I loved them and this will be my go to way of making them in the future!
All in all, this was a perfect meal. Hubby made himself a second plate and he didn’t even need to use the bbq sauce he brought out to eat with the potatoes.
